The group behind the Carbon restaurants presents their latest venue at Raffles City - Carbon Desserts -an emporium dedicated to showcasing dessert as the star. Upscale French-style desserts are paired with champagne cocktails and herbal teas from Mariage Frères Tea Company. Guests can order from an à la carte menu to dine in an elegant room dressed in hues of purple, green and gold. There are also cakes, tarts, chocolate truffles, bread and pastries ready for take-away.
Michelin star chef William Ledeuil created the desserts and also trained the culinary team here. William Ledeuil’s accolades include 1 Michelin star for his Paris restaurant Ze Kitchen Galerie and being named Best Chef of the Year 2010 by Gault et Millau. For Carbon, he created gorgeous plates of desserts intricately assembled with multiple elements exhibiting different textures, flavours and colours.
For example, behold the Red Lipped Flames (红唇烈焰, 88RMB) with frosted pink balls of salty foie gras mousse, red wine and sakura jelly glistening like ruby red and pale pink gemstones, a scoop of raspberry sorbet and a black truffle chocolate truffle ball. That little ball will wake up your senses and rock your perception of chocolate. We usually have the earthy aroma of truffle in savoury dishes, so it’s a marvelous sensation when it’s combined with a rich dark chocolate.
Vanilla Crystals (水晶香草, 78RMB) was light and transcendent. It offered surprising discoveries in a combination of crystal grains of clear lemon jelly, mini globes of kiwi fruit, cucumber sauce and vanilla ice cream.
Blueberry Jelly Tart (果冻蓝莓塔, 48RMB) is a visually stunning dessert with large, plump blueberries suspended in a clear mint jelly over a graham crust.
Desserts will change depending on the seasons, with fruits and berries in summer and soufflés in winter.
Also take your time to browse the take-away dessert display because they are beautiful works of art. Whole cakes, such as Hazelnut Opera Cake or Sakura Cheesecake, can be ordered for between 238-348RMB for an 8-inch cake.
