MORPH Rooftop Bar at Kempinski takes guests into another reality – a whimsical butterfly other-worldliness where you can escape the city and bask in the joys of a fantasy world. Soft silvers, blues and highlights create a luxurious, upmarket vibe, reminiscent of a futuristic multi-sensory party.

MORE had the privilege of visiting last Friday, a week ahead of MORPH’s opening party this New Year’s Eve. Our experience began with a convivial greeting. Beaded curtains open way to swings hanging from the roof, Dan plays Classic House while a team of passionate and dedicated staff offer personable service of carefully crafted cocktails.

Using the butterfly, a symbol for love and romance as its core motif, MORPH references “Liangzhu”, the well-known Chinese love story in abstract. The high-end bar design by Ashley Sutton is all about style and sophistication. Even if you come up to MORPH with no expectations, the design will leave you breathless with surprise.

The cocktail menu was designed by Joseph Boroski who is famous for what’s new, what’s different, and what’s next in the international bar scene. The arched ceiling, decorated with rows of glittering butterflies, gives a subtle nod to Boroski’s fascination with entomology and reinforces Sutton and Boroski’s collaboration. By demonstrating a deeper purpose to just “luxury”, elaborate techniques and expensive ingredients, MORPH aims to deliver narrative for a thoroughly unforgettable experience .

I asked bar manager Leo Yuan to talk us through the menu.

LARVA - Drinks with no alcohol yet decadent and featuring exotic ingredients – shiso, pandan and green skinned mango to name a few.

CATERPILLAR - Six uncommon world classics from the early twentieth century include the Jack Rose and Martinez. One I recommend is the Corpse Reviver #1 (138RMB), stylized by Boroski it contains Sous vide apple cognac, calvados, and quintinye rouge topped with a candied lemon. Loved it.

CHRYSALIS - These low alcohol drinks ease guests into their MORPH encounter. One I tried was the MONARCH (118RMB). Featuring Mancino bianco ambrato, Sazerac rye, passionfruit, red bell pepper, cacao butter and egg white, it was sour and full bodied. Quite nice.

BUTTERFLY - These mature cocktails are originals by Boroski and crafted specifically to complete the MORPH experience. I tried the SWALLOWTAIL (128RMB). With silver rum, banana, golden lychee, passionfruit, cacao butter and angostura bitters, it was a tall drink, a little sour with a good texture and finish. It’s ok.

CONNOISSEUR LIST – The Sommelier shares an exquisite cellar. With exclusive white wine such as the Egon Müller Scharzhofberger Auslese 2017 (Mosel, Germany), elegant red wines from the world’s best regions include Opus One 2014 (Napa Valley, USA), plus BORDEAUX GRAND CRU RED WINE from some of the Bordeaux’s most renowned Chateau such as Château Mouton-Rothschild le Grand Cru Classé 1996.

LUXURY PACKAGE, WINE & BEER - Draft and bottled beer are available as well as a selection of wines by the glass. Packages of spirits, wines or champagne are available with soft drink and fruit platters for sharing.
